Richard Lawson is a relative newcomer to the South Coast of NSW, having moved here in 2009 but brings a wealth of food and growing experience to the district in Olives, Organics and Cooking. He moved from Sydney to the Central West around Mudgee in 1996 and his farm Figtree Retreat Olives had 300 organic Olive trees, was one of the first growers/ processors of Table Olives in the region and his Tapenades and Table Olives became increasingly popular there and at the Growers Markets then popping up all round NSW.

He was one of the first Olive growers/processors at the Fox Growers Markets in Sydney in 1998 and SMH Good Living Growers Markets at Pyrmont. Also Richard was instrumental in the setting up of the Fine Foods of Mudgee and growers markets in Mudgee and Orange. Richard also has been a cook/chef for over 15 years and has cooked at many restaurants, cafes and festivals both in Sydney and in the country. Product Tasting Notes

Garlic and Olive Tapenade This classic recipe dating back to the Renaissance, uses a robust blend of olives, garlic, parsley and capers. It's great on pizza, pasta, with meats, as a vegetable dip or with cheese or small toasts. Mix with butter for a superb sauce for steak!

Fig and Olive Tapenade A pure indulgence! Based on a Turkish/Arabian recipe it is rich beyond belief. A complex mixture of olives, dried figs, brown sugar, balsamic vinegar and olive oil, it is not unlike Olive Chutney. Use it on duck or lamb and goat or any game meats. It is also beautiful with a cheese platter, especially cheddar or just spread on toast for brekky.

Sun Dried Tomato and Olive Tapenade. Tomato and Sundried Tomato overtones send this tapenade into tangy territory. Wonderful with cheese and beer and just perfect with Goats cheese. The taste of the Meditteranean.

Pear and Vanilla Jam. Subtlety in a jar. Real Vanilla bean added to loads of fresh pears makes a sweet moreish jam that is sending customers home to warm it with cream and even ice cream. One of our more popular unusual jams.

Onion and Beetroot Jam. Complex, unique and perfect with Ham, Roast Beef and Pastrami or just with butter on toast. Customers are first perplexed then love the taste. Who would have thought Onion and Beetroot go together??
